Greek Lemon Soup

Ingredients
  Chicken broth 1 1⁄2 Cup (24 tbs)
  Regular long grain rice 1 Ounce (Uncooked, Enriched)
  Egg 1
  Lemon juice 4 Teaspoon (1 Tablespoon Plus 1 Teaspoon)
  Salt 1 Dash
  White pepper 1 Dash
Directions

GETTING READY
1. In a 1-quart saucepan, pour in the broth and bring to the boil
2. Add rice to the pan and then reduce heat.
3. Cover and cook the rice on low heat till it is tender and done. This will take about 20 minutes

MAKING
4. In another small bowl, crack the egg and beat it well
5. Add lemon juice and beat it well again
6. Use a wire whisk to stir the egg continuously while adding ½ cup of soup; a tablespoon at a time. This will thicken the soup without curdling it
7. Add this mixture gently to the soup in the saucepan and heat very gently. Do not boil
8. Season with salt and pepper

SERVING
9. Serve immediately
