Caraway Roasted Carrot And Feta Salad

Ingredients
  Carrots 10 Ounce, peeled and halved or quartered lengthways (300 Gram)
  Caraway seeds 1 Teaspoon
  Olive oil 2 Teaspoon
  Orange 1 , zested
  Red wine vinegar 2 Teaspoon
  Mixed seeds 1 Tablespoon (Such As Pumpkin, Sunflower And Linseed)
  Spinach leaves 1 Cup (16 tbs) (2 Large Handfuls)
  Feta 2 Ounce (50 Gram)
Directions

GETTING READY 1) Preheat the oven to 200 degrees Centigrade. MAKING 2) Boil the carrots for around 4 minutes. Drain the carrots. 3) On a baking sheet, spread the carrots and toss with caraway seeds, orange zest, seasoning and 1 tsp of oil. 4) In the oven, roast the carrots for approximately 20 minutes. FINALIZING 5) Remove the pith from the orange. 6) Over a bowl, cut the orange segements and squeeze off the juice. 7) Mix the remaining oil vinegar along with seeds and seasonings in the orange juice. 8) Combine the mixture with roasted carrots and spinach. SERVING 9) Serve into two seperate plates with a topping of crumbled feta cheese.
