Summer Salad

Ingredients
  Tomatoes 4 Large
  Cucumber 1⁄2 Large
  Lettuce 1 Cup (16 tbs), cut roughly
  Red onion 1⁄2 Small
  Red pepper 1 Large
  Feta cheese 1 Packet
  Black olives 1 Tablespoon
  Fresh coriander 1 Tablespoon, chopped finely
For dressing
  Balsamic vinegar 1 Tablespoon
  Olive oil 2 Tablespoon
  Whole grain mustard 1 Teaspoon
  Fresh oregano 1⁄2 Tablespoon
  Honey 1 Teaspoon
Directions

GETTING READY
1. Chop all the vegetables.

MAKING
2. In a bowl, combine all the vegetables, sprinkle cubes of feta and olive. Add fresh coriander.
3. For making the dressing - in a bowl, combine balsamic vinegar, olive oil, grain mustard, oregano and honey.
4. Pour the dressing over salad and toss it well.

SERVING
5. Serve it as an appetizer.
