Greek Stuffed Mushrooms
|Frozen spinach||10 Ounce (1 Package)|
|Grated parmesan cheese||1⁄2 Cup (8 tbs)|
|Feta cheese||4 Ounce, rinsed and crumbled|
|Finely chopped green onion||1⁄2 Cup (8 tbs)|
|Finely chopped parsley||1⁄2 Cup (8 tbs)|
|Fresh mushrooms||24 , cleaned and stemmed|
Cook frozen spinach on High setting until barely defrosted, about 3 minutes.
Drain well in colander, gently pressing out moisture with wooden spoon.
In mixing bowl, combine drained spinach, cheeses, onion, parsley and salt.
Fill mushroom caps with spinach mixture, mounding high in center .
Arrange on plate used for serving and cook on High setting until steaming hot, approximately 3 to 4 minutes.
