Tzatziki Cucumber Yogurt Dip
|English cucumber||1 , coarsely grated|
|Kosher salt||1 Teaspoon|
|Plain yogurt||1 Cup (16 tbs)|
|Yogurt cheese||1 Cup (16 tbs)|
|Minced garlic||1⁄2 Teaspoon, pureed in a mortar|
|Chopped mint/2 teaspoons dried mint||2 Tablespoon|
|Lemon juice||To Taste|
Combine the cucumber and salt in a colander and let it drain for 15 minutes.
Squeeze out the excess moisture.
Put the cucumber in a medium bowl and stir in the yogurt, yogurt cheese, garlic, mint, and lemon juice.
Adjust the seasoning with salt if necessary.
