Tzatziki Cucumber Yogurt Dip

Ingredients
  English cucumber 1 , coarsely grated
  Kosher salt 1 Teaspoon
  Plain yogurt 1 Cup (16 tbs)
  Yogurt cheese 1 Cup (16 tbs)
  Minced garlic 1⁄2 Teaspoon, pureed in a mortar
  Chopped mint/2 teaspoons dried mint 2 Tablespoon
  Lemon juice To Taste
  Salt To Taste
Directions

Combine the cucumber and salt in a colander and let it drain for 15 minutes.
Squeeze out the excess moisture.
Put the cucumber in a medium bowl and stir in the yogurt, yogurt cheese, garlic, mint, and lemon juice.
Adjust the seasoning with salt if necessary.
