Greek Courgette Bake
|Butter||4 Ounce (125 Gram)|
|Courgettes||2 Pound, thickly sliced (1 Kilogram)|
|Tomatoes||2 , peeled and chopped|
|Chopped fresh dill||2 Tablespoon|
|Freshly ground black pepper||To Taste|
|Eggs||6 , beaten|
|Cheddar cheese||1 1⁄2 Ounce, grated (45 Gram)|
1. Melt butter in a frying pan. Add courgettes, tomatoes and dill, stirring gently to coat the vegetables in melted butter. Season to taste, cover and cook for 30 minutes over gentle heat.
2. Pour eggs over vegetables. Sprinkle with cheese and cook for 3-4 minutes until cheese has melted and eggs have set.
