Carrot Ambrosia Salad

Ingredients
  Shredded raw carrots 3 Cup (48 tbs)
  Orange slices 1 Cup (16 tbs), cut into wedges
  Silvered dates 1⁄4 Cup (4 tbs), seedless raisins
  Flaked coconut 1 Cup (16 tbs)
  Sour cream 1⁄2 Cup (8 tbs)
  Honey 2 Tablespoon
  Ground ginger 1 Dash
  Salt 1 Dash
  Lettuce leaves 4
Directions

Combine carrots with orange pieces, dates or raisins and coconut.
Blend sour cream and honey, to taste, with the ginger and salt.
Pour over salad and toss gently to mix.
Chill and serve on lettuce leaves.
