Greek Style Shrimp with Shells
|Olive oil||1⁄4 Cup (4 tbs)|
|Garlic clove||1 Large, minced|
|Fresh ripe tomatoes/1 can, 1 pound imported italian tomatoes, chunked, with juice||4 Large, peeled and chopped, not seeded|
|Greek olives||12 , pitted|
|Dried oregano||1 Teaspoon|
|Red pepper flakes||1⁄4 Teaspoon (Add More Quantity As Per Taste)|
|Black pepper||To Taste|
|Dry white wine||1⁄2 Cup (8 tbs)|
|Minced flat leaf italian parsley||2 Tablespoon (Fresh)|
|Cooked shelled shrimp||3⁄4 Pound (Large Size)|
|Medium shell macaroni||1⁄2 Pound, cooked according to package directions|
|Crumbled feta cheese||1⁄2 Cup (8 tbs), loosely packed|
Heat the oil in a large skillet.
Saute the garlic but don't brown it.
Add the tomatoes, olives, and seasoning.
Simmer uncovered for 10 minutes.
Add the wine and simmer 10 more minutes.
Add the parsley and shrimp, bring back to a simmer, and remove from the heat.
Spoon the hot cooked macaroni into a serving dish.
Stir in the feta cheese; ladle the sauce over the top.
