Luau Pork Ambrosia

  Pork roast 5 Pound
  Strained apricots 4
  Honey 1⁄3 Cup (5.33 tbs)
  Lemon juice 1⁄4 Cup (4 tbs)
  Soy sauce 1⁄4 Cup (4 tbs)
  Garlic 1⁄2 Clove (2.5 gm), minced
  Onion 1 Small, minced
  Ginger ale 1 Cup (16 tbs)
  Ginger 1⁄8 Teaspoon
  Pepper 1⁄8 Teaspoon
  Apricots 2 Can (20 oz), unpeeled (Or 1 No. 2 Can)
  Grated lemon rind 1 Tablespoon
  Grated coconut 1⁄4 Cup (4 tbs)
  Parsley sprigs 1

Place pork in large bowl.
Combine 2 jars strained apricots, honey, lemon juice, soy sauce, garlic, onion, ginger ale, ginger and pepper; pour over pork.
Marinate for 5 hours, turning occasionally.
Remove pork from sauce, reserving marinade.
Place roast on spit.
Cook over low coals 6 inches from source of heat for 3 hours.
Cook for 25 minutes longer, basting with marinade frequently.
Spread 1 jar strained apricots over roast; cook for 5 minutes.
Heat remaining marinade with 1 jar apricots; serve over pork.
Heat whole apricots and lemon rind together.
Place roast on hot serving platter.
Surround with whole apricots; sprinkle with coconut and parsley sprigs.
