1 Preheat the oven to 400 degrees F
2 Wash the potatoes and wipe them dry.
3 Cut them into slices.
4 In a large ovenproof dish, put the sliced potatoes.
5 Sprinkle some olive oil, Greek seasoning, Oregano, salt and pepper on the potatoes.
6 Mix well so that the potatoes are evenly coated.
7 Place the roasting chicken on the potatoes and put some garlic cloves in the cavity.
8 Squeeze the lemon juice on the chicken and put the squeezed lemons in the cavity as well.
9 Sprinkle the chicken with a generous pinch of Greek seasoning, Oregano and salt and pepper to taste.
10 Place the chicken in the oven and let roast for about 2 hours.
11 Carve and serve the chicken along with the potatoes.

It is said that the Greeks know how to make their chicken taste heavenly. Well, Chef Nikko is going to do it the same way as Greeks do. Whole chicken and potato slices are seasoned with flavorful herbs stuffed with whole garlic cloves and squeezed lemon juice on top. The squeeze lemon pieces are stuffed and then everything is baked. It’s yummy and definitely thumbs up for a family dinner or a party.
