Greek Style Scampi
|Olive oil||1 Teaspoon|
|Garlic||5 Clove (25 gm), minced|
|Canned whole tomatoes||84 Ounce, drained and coarsely chopped (3 Cans, 28 Ounce Each)|
|Chopped fresh parsley||1⁄2 Cup (8 tbs), divided|
|Large shrimp||1 1⁄4 Pound, peeled and deveined|
|Crumbled feta cheese||1 Cup (16 tbs)|
|Fresh lemon juice||2 Tablespoon|
|Freshly ground pepper||1⁄4 Teaspoon|
Preheat oven to 400°.
Heat oil in a large Dutch oven over medium heat until hot.
Add garlic; saute 30 seconds.
Add tomatoes and 1/4 cup parsley; reduce heat, and simmer, uncovered, 10 minutes.
Add shrimp, and cook 5 minutes.
Pour mixture into a 13 x 9-inch baking dish; sprinkle with cheese.
Bake at 400° for 10 minutes.
Sprinkle with remaining parsley, juice, and pepper.
