Greek Mini Meat Loaves

Ingredients
  Ground lamb/Beef 1 Pound
  Uncooked instant rice 1⁄2 Cup (8 tbs)
  Onion 1 Small, chopped to make 1/4 cup
  Egg 1
  Lemon juice 2 Tablespoon
  Chopped fresh mint/1 teaspoon dried mint 2 Teaspoon
  Salt 1⁄2 Teaspoon
  Pepper 1⁄4 Teaspoon
  Thin lemon slices 4
Directions

Mix all ingredients except lemon slices.
Shape into 4 small loaves.
Place on microwave rack in microwavable dish.
Arrange 1 lemon slice on each loaf.
Cover with waxed paper and microwave on high 8 to 10 minutes, rotating dish 1/2 turn after 5 minutes, until no longer pink.
Let stand covered 5 minutes.
