Luci Lock of shows you how to make a delicious chilled Greek Chicken Salad - perfect for those hot summer days!
  Chicken breasts 2 , cooked and shredded
  Cucumber 1 , chop
  Spearmint 2 Tablespoon, chop
  Yogurt 1 Cup (16 tbs) (Goat's yogurt)

1. In a mixing bowl, add in the chicken, cucumber, spearmint and goat's yogurt.
2. Toss well together.

3. Plate and serve as an appetizer.
