Feta And Spinach Orzo

Ingredients
  Uncooked orzo pasta 1 1⁄2 Cup (24 tbs)
  Light butter 1 Tablespoon
  Finely chopped shallots 2⁄3 Cup (10.67 tbs)
  Garlic 2 Clove (10 gm), minced
  All purpose flour 2 Tablespoon
  Vegetable broth 1 1⁄2 Cup (24 tbs)
  Grated lemon rind 1 Tablespoon
  Fresh lemon juice 2 Tablespoon
  Salt 1⁄2 Teaspoon
  Frozen chopped spinach 10 Ounce, thawed, drained, and squeezed dry (1 Package)
  Crumbled feta cheese 4 Ounce (1 Cup)
Directions

1. Cook orzo according to package directions, omitting salt and fat.
2. Melt butter in a large nonstick skillet over medium heat. Add shallots and garlic; cook 2 to 3 minutes or until tender. Sprinkle flour over mixture; cook 2 minutes. Slowly whisk in broth; bring to a boil. Add rind, juice, and salt. Simmer 3 to 5 minutes or until thick.
3. Combine orzo, spinach, cheese, and shallot mixture; stir until blended.
