Greek Salad With Cheese

Ingredients
  Diced tomato 2 1⁄4 Cup (36 tbs)
  Cucumber 1 Large, peeled, seeded, and coarsely chopped
  Diced purple onion 1⁄2 Cup (8 tbs), diced
  Greek olives 8 , pitted and chopped
  Chopped fresh parsley 1⁄4 Cup (4 tbs)
  Crumbled feta cheese 1⁄4 Cup (4 tbs)
  Dried whole oregano 1⁄2 Teaspoon
  Freshly ground pepper 1⁄8 Teaspoon
  Canned no salt added chicken broth 3 Tablespoon, undiluted
  Water 3 Tablespoon
  Red wine vinegar 1 Tablespoon
  Lemon juice 2 Teaspoon
  Olive oil 1 Teaspoon
  Salt 1⁄8 Teaspoon
  Freshly ground pepper 1 Dash
  Ground red pepper 1 Dash
  Radicchio leaves 4 (Fresh)
  Fresh arugula leaves 4
Directions

Combine first 8 ingredients in a medium bowl.
Combine chicken broth, water, vinegar, lemon juice, olive oil, salt, pepper, and red pepper in a small bowl, stirring well.
Pour chicken broth over tomato mixture, tossing well.
Cover and chill 1 hour before serving.
