Warm Spinach Salad With Feta Cheese
|Fresh spinach||1⁄2 Pound|
|Diced purple onion||1⁄2 Cup (8 tbs)|
|Sherry vinegar||2 Tablespoon|
|Garlic||1 Clove (5 gm), minced|
|Freshly ground pepper||1⁄8 Teaspoon|
|Canned low sodium chicken broth||1⁄2 Cup (8 tbs) (Undiluted)|
|Olive oil||1 Tablespoon|
|Ground red pepper||1 Dash|
|Crumbled feta cheese||1⁄4 Cup (4 tbs)|
Remove stems from spinach; wash leaves, and pat dry Thoroughly with paper towels.
Combine spinach and diced purple onion in a large bowl; set aside.
Combine sherry vinegar, garlic, salt, and freshly ground pepper in a small bowl; stir with a wire whisk until well blended.
Pour over reserved spinach mixture, and toss gently.
Combine chicken broth, olive oil, and red pepper in a small saucepan.
Place over medium heat until thoroughly heated.
Pour over spinach mixture, tossing gently.
