Ingredients
  Garlic 1 Clove (5 gm)
  Lettuce head 1 Medium, shredded
  Tomatoes 3 Medium, cut into eighths
  Cucumber 1 Medium, sliced
  Green onions 6 , sliced
  Celery stalks 3 , diced
  Green pepper 1 Medium, diced
  Radishes 6 , sliced
  Carrot 1 , shredded
  Chopped fresh parsley 2 Tablespoon
  Salt 1 Teaspoon
  Pepper 1⁄8 Teaspoon
  Olive oil 1⁄4 Cup (4 tbs)
  Vinegar/Lemon juice 1 Tablespoon
  Beet 1 , sliced (Canned / Cooked)
  Feta cheese 4 Ounce, crumbled
  Ripe olives 8
  Cooked chickpeas 1⁄4 Cup (4 tbs)
Directions

1. Rub large salad bowl with garlic.
2. Combine next eleven ingredients.
3. Toss lightly with olive oil. Sprinkle with vinegar. Toss again.
4. Garnish with border of sliced beet and feta cheese.
5. Arrange olives in center and sprinkle chick peas over all.
