Great Greek Pasta Salad
|Penne pasta/Spiral pasta||8 Ounce|
|Red onion||1 Small, chopped|
|Bell peppers||2 , diced (Assorted Colors)|
|Crumbled feta cheese||3⁄4 Cup (12 tbs)|
|Kalamata olives||1⁄2 Cup (8 tbs)|
|Chopped parsley||1⁄4 Cup (4 tbs)|
|Olive oil||2 Tablespoon|
|Red wine vinegar||1 Tablespoon|
|Dried oregano||1 Teaspoon|
|Tzatziki sauce||3⁄4 Cup (12 tbs)|
1. Cook pasta in a large pot of boiling salted water until tender but firm. Drain; rinse under cold water to chill. Drain well. In a serving bowl, combine pasta, onion, bell peppers, feta, olives and parsley.
2. Dressing: In a bowl combine Tzatziki Sauce, oil, vinegar, oregano and pepper; toss with pasta mixture to coat. Cover and refrigerate. Remove from fridge 30 minutes before serving.
