Egg Lemon Avgolemono

Ingredients
  Eggs 2 Large
  Grated lemon rind 1 Teaspoon
  Fresh lemon juice 2 1⁄2 Tablespoon
  Kosher salt 1⁄4 Teaspoon
  Ground red pepper 1⁄8 Teaspoon
  30% less salt chicken broth 1 Cup (16 tbs) (Such As Campbell's Healthy Request)
  Cooked long grain rice 1 1⁄2 Cup (24 tbs) (Cooked Without Salt Or Fat)
  Chopped fresh parsley 2 Tablespoon
Directions

1. Combine first 5 ingredients in a small bowl; stir well, and set aside.
2. Bring broth to a boil in a medium saucepan over medium-high heat. Reduce heat to medium, and whisk in egg mixture. Cook 5 minutes or until thick, stirring constandy (do not boil).
