Egg Lemon Avgolemono
|Grated lemon rind||1 Teaspoon|
|Fresh lemon juice||2 1⁄2 Tablespoon|
|Kosher salt||1⁄4 Teaspoon|
|Ground red pepper||1⁄8 Teaspoon|
|30% less salt chicken broth||1 Cup (16 tbs) (Such As Campbell's Healthy Request)|
|Cooked long grain rice||1 1⁄2 Cup (24 tbs) (Cooked Without Salt Or Fat)|
|Chopped fresh parsley||2 Tablespoon|
1. Combine first 5 ingredients in a small bowl; stir well, and set aside.
2. Bring broth to a boil in a medium saucepan over medium-high heat. Reduce heat to medium, and whisk in egg mixture. Cook 5 minutes or until thick, stirring constandy (do not boil).
