Kourabiedes With Orange Juice

Ingredients
  Unsalted butter 1 Pound
  Confectioners sugar 1 1⁄2 Cup (24 tbs)
  Egg yolks 2
  Flour 2 Pound (Adjust Quantity As Needed)
  Baking soda 1⁄2 Teaspoon
  Orange juice 3 Tablespoon
Directions

Leave butter at room temperature until very soft.
Place in electric mixer, and beat until light and creamy.
Add 1/2 cup sugar, and beat for 5 minutes.
Add egg yolks and orange juice, and beat until well-blended.
Sift flour and baking soda gradually into butter mixture to make a soft dough that does not stick to fingers.
Shape into small round balls, and press down in center.
Place on buttered cookie sheet 1 inch apart, and bake at 375° for 20 minutes or until very lightly browned.
Cool slightly; remove from baking sheet.
Carefully place on flat surface which has been sprinkled with 1/2 cup sifted sugar.
Sprinkle remaining sifted sugar over cookies.
Allow cookies to cool completely, and place on serving dish.
