Stewed Potatoes With Tomatoes And Feta
|Olive oil||1 1⁄2 Tablespoon|
|Spanish onion||1 Cup (16 tbs), chopped|
|Garlic||2 Clove (10 gm), peeled and minced|
|Tomato sauce||1 Cup (16 tbs)|
|Water||1 Cup (16 tbs)|
|Chopped parsley||2 Tablespoon|
|Ground pepper||To Taste|
|Potatoes||4 Medium, peeled and cut into 6 wedges|
1. In a 10-inch deep-sided skillet, heat the oil and saute the onion over moderate heat until soft and golden. Add the garlic, tomato sauce, water, parsley, and salt and pepper.
2. Bring to a boil, add the potatoes, cover tighdy, lower the heat, and cook 30 minutes, or until the potatoes are tender and the sauce is thickened.
