Greek Pasta Salad
|Extra lean ground beef||1⁄2 Pound (90% Lean)|
|Chopped fresh mint/2 tablespoons dried leaf mint||1⁄3 Cup (5.33 tbs)|
|Garlic||1 Clove (5 gm), minced|
|Shell macaroni||6 Ounce, cooked (1 3/4 Cup Shell Macaroni)|
|Cherry tomatoes||10 , quartered|
|Feta cheese||2 Ounce, crumbled|
|Pepper red||1⁄2 , chopped|
|Red onion||1⁄2 , cut into rings|
|Low calorie italian dressing||1⁄4 Cup (4 tbs)|
|Lemon juice||2 Tablespoon|
|Ground black pepper||To Taste|
Brown ground beef in medium skillet.
Add mint and garlic; cook 2 minutes, stirring constantly.
Spoon ground beef mixture into large bowl.
Stir in pasta, tomatoes, cheese, red peppers and onions.
Add dressing and lemon juice; toss lightly.
Season with salt and pepper to taste.
