Lamb And Beef Keftedes

Little balls of goodness
  Ground lamb 1 Pound
  Ground beef 1 Pound
  Onion 1⁄2 Medium
  Greek seasoning 1 Tablespoon
  Cottage cheese 200 Gram
  Fresh mint leaves 10 , chopped
  Egg 2
  Fresh bread crumbs 1 Cup (16 tbs)
  Asparagus 100 Gram
  Tomato 1 Medium
  Leafy vegetables 1 Cup (16 tbs)
  Oil 3 Tablespoon
  Salt To Taste

1. Grate onion.
2. Chop the mint leaves and tomatoes.
3. Mash the cottage cheese.
4. Cut the asparagus into 4 inch sticks and fry.

5. In a large mixing bowl, place the ground meats, onion, Greek seasoning, cottage cheese, mint leaves, eggs, bread crumbs and salt, combine well and make equal sized balls.
6. In a skillet, heat oil and cook the meat balls until it turns crisp and brown.

7. In an individual plate, place the leafy greens, tomatoes, fried asparagus and the meat balls, serve hot.

Greek Lamb And Beef Meatballs
Nikko is preparing lamb and beef keftedes with a little twist. The feta cheese and mint gives a little different taste to the keftedes. If you have ever made meatballs then this recipe is going to be a very easy for you. If you have never made them still you can make them by following the chef's simple step by step instructions. Give it a try this weekend and have fun.

Love the combination of ground lamb and beef YUM and kewl soda water. Most non-Balkans don't know about this "secret" ingredient. It keeps the meat moister but also helps them brown easily. I have never tried Penzey's Greek Seasoning should be great as I love all their spices. The feta in the Keftedes - never tried that, but my daughter puts feta in her moussaka and anything else she can. All you need are some Gigandes Plaki or Fasolia Gigandes . Do you have a family recipe for gigandes/gigantes? Always love trying new gigandes recipes.

This was the first time I've made them with the soda water - You suggested it the last time we talked about them - it worked well! The feta was also a nice touch - had never done that before but it worked... The Penzey's Greek Seasoning is just easy. Don't get me wrong it's good - It's not as good as using fresh everything - it just helps in prep time...

Try the soda water in burgers you are going to grill makes them moist and they brown nicely. Next we need to get you to try Vegeta, sort of the seasoning in the Balkans. Mary-Anne (Shanti) Lover of Cuisines of Flavour
