Greek Style Shrimp
|Olive oil||2 Tablespoon|
|Green onions||1 Cup (16 tbs), sliced|
|Garlic||4 Clove (20 gm), minced|
|Large shrimp||1 Pound, shelled and deveined|
|Vegetable juice/No salt added vegetable juice||3⁄4 Cup (12 tbs)|
|Crumbled feta cheese||2 Ounce (1/3 Cup)|
|Chopped parsley||2 Tablespoon|
|Baked french bread slices||8|
In 10-inch skillet over medium heat, in hot oil, cook onions and garlic until onions are tender.
Add shrimp; cook until shrimp are pink and opaque, stirring constantly.
Stir in juice.
Heat to boiling.
Reduce heat to low; simmer 2 minutes.
Sprinkle with cheese, parsley and pepper.
