Greek Holiday Loaf
|Active dry yeast||1 Tablespoon|
|Warm milk||1⁄3 Cup (5.33 tbs) (105-115F)|
|Sugar||1 Cup (16 tbs)|
|Boiled potato||1 Medium, mashed|
|Flour||3 1⁄2 Cup (56 tbs)|
|Egg yolk||1 , beaten|
|Hard cooked eggs||2|
|Candied cherries||1 Tablespoon|
1 Dissolve yeast in warm milk. Set aside for 5 minutes. Mix butter and sugar in a large bowl. Add eggs and egg yolk. Mix thoroughly.
2 Add yeast mixture to sugar mixture. Add potato and enough flour to make a soft dough.
3 Knead on lightly floured surface until smooth€”about 10 minutes.
4 Place in greased bowl, turning to coat top. Cover; let rise in warm place until double€”about 1 hour.
5 Punch down dough. Shape into loaf and place in greased 9 x 5-inch loaf pan.
6 Cover; let rise until double€”about 45 minutes.
7 Brush top with beaten egg yolk. (At Eastertime, garnish with dyed eggs; at Christmas, garnish with walnuts and candied cherries.) Bake in a preheated 350°F oven 45€”60 minutes or until done. Cool on wire rack.
