Vita-Spelt Feta Salad
|Vita spelt kernels||240 Milliliter (1 Cup)|
|Water||590 Milliliter (2 1/2 Cup)|
|Fresh parsley||240 Milliliter, chopped (1 Cup)|
|Garlic||4 Clove (20 gm), minced|
|Lemon juice||45 Milliliter (3 Tablespoon)|
|Feta cheese||60 Milliliter (In Pieces, 1/4 Cup)|
|Currants||30 Milliliter (2 Tablespoon)|
|Scallions||4 , finely chopped|
|Fresh mint||2 Teaspoon, chopped (10 Milliliter)|
|Olive oil||45 Milliliter (3 Tablespoon)|
|Black olives||60 Milliliter (1/4 Cup)|
Put Vita-Spelt in blender or processor until majority of kernels are broken into pieces.
Do not over blend.
Mixture should be the consistency of medium bulgur.
Bring water to a boil.
Add spelt and bring to boil again.
Lower temperature and cover.
Simmer for approximately 1 hour or until all water is absorbed.
Be careful not to scorch the grain.
Run cold water over grain, or allow to cool naturally.
Toss all ingredients together thoroughly.
Salt and pepper to taste.
Chill before serving, to allow flavors to blend.
