Healthy Greek Salad
|Cos lettuce leaves||1 , outer leaves removed, washed and separated into leaves|
|Radishes||1 Bunch (100 gm), cleaned and sliced|
|Feta cheese||8 Ounce, cut into cubes|
|Dried marjoram||1⁄4 Teaspoon|
|Tomatoes||4 , blanched, peeled and sliced|
|Anchovies||6 , drained and finely chopped|
|Black olives||6 Large, halved and stoned|
|Chopped fresh parsley||1 Tablespoon|
|Freshly ground black pepper||1⁄2 Teaspoon|
|Olive oil||4 Tablespoon|
|White wine vinegar||1 1⁄2 Tablespoon|
|Mixed herbs||1 Tablespoon, such as marjoram, chives or lemon thyme|
|Spring onions||4 , chopped|
Tear the lettuce leaves into pieces and arrange them on a large dish.
Scatter the radish slices over the lettuce.
Arrange the cheese in the centre of the dish and sprinkle it with the marjoram.
Place the tomatoes in a circle around the cheese and put the anchovies on top of the tomatoes, alternating with the olives.
Sprinkle the parsley and pepper on top.
In a small bowl, mix together the oil, vinegar, fresh herbs, spring onions [scallions], sugar, salt and pepper.
Pour the dressing over the salad and serve.
