Greek Style Chicken
|Olive oil||1 1⁄2 Tablespoon|
|Fresh lemon juice||3 Tablespoon|
|Oregano leaves||1 1⁄2 Teaspoon|
|Broiler fryer chicken||3 Pound, cut in serving pieces, rinsed and patted dry|
|Cooked rice/Cooked noodles||1 Cup (16 tbs)|
1. Combine oil, lemon juice and oregano in an 8-inch square glass baking dish. Add chicken pieces and turn to coat. Arrange chicken pieces skin-side-up in a single layer with thin end toward center and thicker end toward outside. Sprinkle with salt and pepper. Cover with plastic wrap. Let marinate in refrigerator 1 hour; turn pieces over once.
2. Discard plastic wrap. Cover dish with waxed paper. Cook in microwave oven 9 minutes at High.
3. Turn chicken pieces over and rearrange. Sprinkle with paprika. Cook covered in microwave oven 8 to 9 minutes at High, or until thoroughly cooked.
4. Let stand 5 minutes.
