Greek Zucchini And Potato Bake

This Greek dish can be made part of a menu for any occasion. Even for the weekends. The recipe is simple to cook and great to eat. It is also good for the people concerned about calorie intake.
Ingredients
  Roma tomato 2 Small, sliced
  Tri colored bell pepper 3⁄4 Cup (12 tbs), frozen
  Flat leaf italian parsley 3 Tablespoon (Fresh)
  Dried oregano 2 Teaspoon (Mediterranean)
  Eggplant 1⁄2 , sliced
  Zucchini 1
  Potato 1
  Garlic cloves 2 Medium, minced
  Black pepper 1 Teaspoon
  Kosher salt 3⁄4 Teaspoon
  Bay leaf 1
  Extra virgin olive oil 3 Tablespoon
  Canned tomato sauce 4 Tablespoon
Directions

Slice eggplant, tomato, potato, tri colored peppers and zucchini. Combine them and add minced garlic and Italian parsley, black pepper and kosher salt. Now add bay leaf, olive oil and oregano and hand toss all the ingredients. Add tomato sauce and mix all ingredients well. Transfer the ingredients into a round pan. Put this pan in a solar heater for about 4 hours or till the vegetables are completely cooked.
