Greek Greens And Olive Salad
|Salad oil||1⁄2 Cup (8 tbs)|
|Lemon juice||3 Tablespoon|
|Italian dressing mix||1 Tablespoon|
|Mixed greens||2 Quart|
|Tomatoes||2 Medium, cut into wedges|
|Ripe olives||1⁄2 Cup (8 tbs)|
|Feta cheese||1⁄2 Cup (8 tbs)|
|Canned anchovy fillets||2 Ounce (1 Can)|
1. In jar, shake together oil, lemon juice, Italian Dressing Mix, and oregano.
2. In salad bowl, toss together the greens, tomatoes, and 1/4 cup each of the ripe olives and feta cheese, with enough dressing to coat lightly.
3. Garnish with remaining olives, cheese, and anchovy fillets.
