Tasty Grilled Greek Chicken
|Boneless skinless chicken breast||6|
|Mojo marinade||2 Cup (32 tbs)|
|Scallions||4 , diced|
|Cucumber||1 , seeded and diced|
|Plum tomatoes||4 , seeded and diced|
|Black olives||1⁄2 Cup (8 tbs), pits removed, sliced|
|Low fat feta cheese||1⁄2 Cup (8 tbs)|
|Shallots||2 , chopped|
|Cilantro leaves||1 Cup (16 tbs)|
|White vinegar||1 Cup (16 tbs)|
|Olive oil||1 Tablespoon|
Place chicken in a re-sealable plastic bag. Pour in Mojo marinate. Place in refrigerator for 1 hour.
To make vinaigrette, add shallots, cilantro, vinegar, salt and pepper to taste to a blender. Slowly add olive oil, till liquid emulsifies.
In large bowl combine: scallions, cucumber, tomatoes, black olives, and feta cheese. Add 3/4 cup of vinaigrette.
Grill chicken breast 3-4 minutes per side, till internal temperature is 160*F.
Plate chicken, top with greek vegetable mixture, and spoon remainder of vinaigrette over chicken breasts. Serve with brown rice or whole wheat couscous.
