Greek Sausages

Ingredients
  Chopped beef 1 Pound
  Chopped pork 1 Pound
  Allspice 1 Teaspoon
  Black pepper 1 Teaspoon
  Cinnamon 1 Teaspoon
  Garlic 1 Teaspoon, crushed
  Whole black peppercorns 20 , cracked
  Wine 4 Ounce
  Lemon juice 1 Tablespoon
  Orange rind 1 , finely chopped (Thin)
Directions

Mix all ingredients except lemon juice and marinate for one week in the refrigerator, stirring every day.
Fry one small portion to check seasoning and, if necessary, add salt.
Using proper attachment on meat grinder for stuffing, stuff mixture into casings separated into 12 inch lengths.
Prick casings with fork.
String stuffed casings up to dry, either in cold cellar or out of doors in cold weather in a protected area, for one week.
Cut in 1 inch pieces and broil.
Sprinkle with lemon juice and serve warm,
