Greek Lemon Chicken

Ingredients
  Young chicken 1 , quartered (Perdue┬«, Fresh)
  Lemon juice 1⁄2 Cup (8 tbs)
  Cold pressed olive oil 2 Tablespoon
  Onion 1 Medium, sliced into thin rings
  Chopped fresh oregano/2 teaspoons dried oregano 2 Tablespoon
  Chopped fresh thyme/1/2 teaspoon dried thyme 2 Teaspoon
  Ground black pepper 1⁄4 Teaspoon
  Ground red pepper To Taste
Directions

Rinse chicken; pat dry.
Remove skin, if desired.
In large shallow bowl, combine all remaining ingredients except garnishes.
Add chicken; marinate in refrigerator at least 30 minutes.
Preheat broiler.
Remove chicken from marinade; place on rack in broiler pan.
Broil chicken quarters, 4 inches from heat source, 30 to 35 minutes until cooked through, turning and basting with marinade 3 to 4 times during cooking.
Add onion slices from marinade during last 10 minutes of broiling time.
Serve chicken with onion slices.
Garnish with lemon wedges, oregano and thyme, if desired.
