Prawns And Greek Peas

Ingredients
  Egg white 1 , beaten
  Cornflour 1 Tablespoon
  Peeled prawns 225 Gram
  Sunflower oil 3 Tablespoon
  Root ginger slice 1 , peeled, finely chopped
  Onion spring 1 , finely chopped
  Green peas 175 Gram
  Salt 1 1⁄2 Teaspoon
  Sugar 2 Teaspoon
  Dry sherry 1 Tablespoon
  Sesame oil 1 Teaspoon
Directions

Mix the egg white and the cornflour and coat the prawns with this mixture.
Refrigerate for 20-30 minutes.
Heat the oil in a wok or frying pan over a moderate heat and stir-fry the prawns for 1 minute.
Remove with a slotted spoon and drain on absorbent kitchen paper.
Heat the oil remaining in the pan until hot.
Add the ginger, onion and green peas and stir-fry for 30 seconds.
Add the prawns, salt, sugar and sherry and stir fry for 1 minute.
