|Parsley||1 Tablespoon, finely chopped|
|Milk||1 Cup (16 tbs)|
|Feta cheese||1⁄2 Pound, crumbled|
|Kefalotiri||3 Ounce, grated (or guyere)|
|Eggs||2 , beaten|
Melt the 3 tablespoons of butter, add flour, and stir.
When mixture starts to bubble, remove from heat and gradually stir in milk.
Cook, stirring constantly, until smooth and thickened.
Empty sauce into bowl, add cheese, eggs, parsley, and seasonings.
With melted butter and phyllo sheets, prepare triangles according to instructions given in recipe for CHEESE PUFFS.
Bake in a 425 degree oven for about 20 minutes or until golden brown.
