A great healthy appetizer or snack, these cucumbers are stuffed with a simple Greek Salad, ingredients like cherry Tomatoes, Olives, Shallots and Feta cheese and topped with a beautiful grilled Shrimp!
Cucumber slice | 8 Large , 2 cm slices with the centers scooped out | |
Tiger shrimp | 8 | |
Dressing | 2 Tablespoon ((Greek)) | |
Fresh oregano | 1 Teaspoon | |
Fresh thyme | 1 Teaspoon | |
Salt | To Taste | |
Greek olives | 4 , sliced | |
Shallot | 1 Small | |
Cherry tomato | 4 , sliced | |
Feta cheese | 1 Cup (16 tbs) , crumbled |
MAKING:
In a bowl, combine shrimp, salt, dressing, oregano and marinate for a while.
Cook on grill and set aside.
Assemble ingredients in cucumber cups and top with shrimp.
Garnish as shown in the video.
