Cabbage In Gravy

Ingredients
  Cabbage 2 1⁄4 Pound
  Lard 1 Ounce
  Flour 2 Ounce
  Sour cream 2 Tablespoon
  Onions 1 Ounce
  Salt 1 Teaspoon
  Streaky bacon 1 Ounce
  Ground black pepper 1 Pinch
  Caraway seeds 1 Pinch
  Garlic 1 Clove (5 gm)
Directions

Cut the cleaned cabbage into strips, put it with the salt and caraway seeds into boiling water.
Dice and fry bacon, strain off the fat and use it for making light brown roux with finely chopped onions and garlic.
Thin roux with cold water, mix in some cream, put in cabbage and bring to boil.
Let it simmer a while, season with ground pepper and add the fried bacon.
Pig's trotters, ears or head improve the flavour if cooked with the cabbage, and can be served with it.
