Baked Country Ham and Red Eye Gravy
|Country ham||18 Pound (with bone in)|
|Vinegar||1 Cup (16 tbs)|
|Water||1 Cup (16 tbs) (adjust quantity as required)|
|Brown sugar||2 Tablespoon (to rub the ham)|
|Ground cloves||1 Tablespoon (to rub the ham)|
|Strong coffee||1⁄2 Cup (8 tbs)|
1)Take a large pot, soak ham covered in vinegar and water for 24 hours.
2)To cook, preheat the oven to 325 degrees
3)Drain the ham, add fresh water to pot and soak for another 3 hours.
4)Once done, cool and then trim off any excess fat,and also the hardened meat on the underside.
5)Take a knife,score the ham and rub it all over with brown sugar and ground cloves.
6)Place the ham in a roaster with a rack, and bake for 30 minutes, uncovered.
7)Take a carving knife, slice thinly.
8)To make gravy,pour the dripping into a bowl,and add coffee to the roaster.
9)Warm over a medium flame and deglaze the pan juices.
10)Pour over ham and serve hot.
