Old Fashioned Onion Gravy
|Meat fat and drippings/Bacon fat||4 Tablespoon|
|Thinly sliced onions||2 Cup (32 tbs)|
|Beef consomme||2 Cup (32 tbs)|
|Freshly ground pepper||To Taste|
|Dried thyme||1⁄4 Teaspoon|
|Worcestershire sauce||1 Tablespoon|
|Capers||2 Tablespoon, drained|
Heat the fat and cook the onions, stirring constantly, until soft and golden.
Stir in the flour and cook for 2 more minutes.
Stir in the consomme.
Taste (the consomme may be salty) and stir in salt and pepper, thyme, Worcestershire sauce and capers.
Simmer covered over low heat for 10 minutes.
