After roasting meat, remove from baking dish; cover to keep warm and set aside.
Pour cooking liquid from meat into bowl, leaving particles in baking dish.
Allow fat to rise to the top.
Return 2 tablespoons fat to the baking dish.
Skim off any remaining fat and discard.
Pour cooking liquid into 1-cup measure.
If necessary, add beef broth to measure 1 cup.
Blend flour into fat in baking dish.
Microwave at HIGH (100%) until lightly browned, 3 to 7 minutes.
Gradually stir in reserved cooking liquid.
Microwave at HIGH (100%) until slightly thickened and smooth, 3 to 6 minutes, stirring several times during cooking.
Sprinkle with salt and pepper to taste.
Stir in a few drops brown bouquet sauce, if desired.
