Grapefruit A La St. Patrick

Ingredients
  Granulated gelatin 1 Ounce (2 tablespoons)
  Cold water 1⁄2 Cup (8 tbs)
  Boiling water 1⁄2 Cup (8 tbs)
  Fresh mint 1 Teaspoon
  Sugar 3⁄4 Cup (12 tbs)
  Ice water 1 Cup (16 tbs)
  Grapefruit pulp and juice 2 Cup (32 tbs)
  Maraschino cherries 1 Tablespoon (adjust quantity as needed)
Directions

GETTING READY
1.Start by cutting the grapefruit in half, crosswise, and scoop out the pulp being careful not to cut the skins
MAKING
2.Drop the shells into cold water until needed
3.Simmer a few sprigs of fresh mint in the boiling water until the flavor is extracted
4.Follow the standard directions for making jelly
5.When jelly is firm, cut it into cubes, pile the cubes in the grapefruit shells and garnish with sprigs of mint and cherries
Serving
6.Serve with ice cream
