Island Grapefruit Appetizer
|Rum||1⁄2 Cup (8 tbs)|
|Chopped mint||2 Teaspoon|
|Orange segments||1 Cup (16 tbs)|
|Cherries||1 Cup (16 tbs)|
Halve grapefruit, cutting in scallop pattern.
Section grapefruit, removing membrane; reserve shells.
Place half the grapefruit sections, rum, sugar and mint in blender container.
Blend at high speed until lique- fied.
Arrange remaining grapefruit sections and orange segments in reserved grapefruit shells; pour blended mixture over top.
Garnish with cherries.
Chill and serve.
