Sugar Broiled Grapefruit
|Yellow grapefruit||2 (4 Inch In Diameter)|
|Orange juice||1⁄4 Cup (4 tbs)|
|Brown sugar||1⁄4 Cup (4 tbs), firmly packed|
|Grated orange rind||1 Teaspoon|
1. Preheat broiler.
2. Cut grapefruit in half; remove seeds. Using sharp knife, cut around edges and sections to free flesh. Remove tough fibrous center. Place grapefruit in shallow baking dish.
3. Sprinkle each grapefruit half with 1 tablespoon orange juice and one-fourth of mixture of brown sugar and grated orange rind. Place cherry in center of each. Broil grapefruit 6 inches from heat for 8 to 10 minutes or until lightly browned.
