Skate With Grapefruit

Ingredients
  Skate wings 2 Pound, cleaned (2 pieces, 1 pound each)
  Vinegar 1 Tablespoon
  Parsley 1 Teaspoon
  Bay leaf 1
  Butter 2 Teaspoon
  Onion 1 , chopped
  Grapefruit juice 1 Cup (16 tbs)
  Capers 1 Tablespoon
  Grapefruit 1 , peeled, pith removed, sectioned
  Salt To Taste
  Pepper To Taste
Directions

In a casserole dish, cover skate with salted water.
Add vinegar, parsley and bay leaf.
Bring to a boil.
Simmer 15-20 minutes.
Remove skate.
Skin fish, detaching fillets.
Transfer to a serving dish.
Keep warm.
In a skillet, melt butter.
Lightly cook onion.
Add grapefruit juice and capers.
Season.
Bring to a boil.
Simmer 1 minute.
Spoon sauce over fish.
