Sea Trout With Grapes
|Sea trout||2 Pound (1 kilogram, 7 pieces)|
|White port||1⁄3 Cup (5.33 tbs)|
|Seedless white grapes||1⁄2 Pound, peeled|
|Cornstarch||1 Teaspoon (corn flour)|
|Sour cream||4 Tablespoon (creme fraiche)|
|Mild mustard||1 1⁄2 Teaspoon|
Clean the trout and remove the head.
Rinse the fish under plenty of cold running water and pat dry on kitchen paper.
Put the fish in a long dish and add the port.
Cover and microwave on HIGH for 6 minutes.
Put the cornstarch (cornflour) in a bowl.
Gradually stir in the sour cream (creme fraiche) until you have a smooth mixture.
Add the mustard and the cooking liquid from the fish.
Cook for 1 minute on HIGH.
Stir and cook for 1 further minute.
Add the grapes and heat for 30 seconds.
Taste and adjust seasoning.
Remove the skin from the trout.
Put the fish in a serving dish.
Pour the sauce and grapes over
