Oxtail Cooked with Grapes
|Butter||2 Ounce (1/2 Stick, 50 Gram)|
|Bacon||1⁄4 Pound, diced (100 Gram, 4 Ounce)|
|Onions||2 Large, peeled and chopped|
|Garlic||2 Clove (10 gm), peeled and chopped|
|Carrots||6 , diced|
|Oxtails||2 , cut into short lengths|
|Freshly chopped parsley||1⁄4 Cup (4 tbs)|
|Black pepper||To Taste|
|White grapes||2 Pound, seeded and de-stalked (1 Kilogram)|
Melt butter in a large casserole.
Add bacon, and fry gently.
Add onions, garlic, and carrots.
Cook over a low heat for 15 min.
Add oxtail and herbs.
Season, cover, and cook over a low heat for 20 min.
Lightly crush grapes in a bowl, and add to casserole.
Transfer to a very low oven, 140°C/Gas Mark 1/275°F, for 3-4 hr. (until meat almost falls off the bones).
Skim fat from surface of sauce, and serve immediately from casserole.
