Oxtail Cooked with Grapes

Ingredients
  Butter 2 Ounce (1/2 Stick, 50 Gram)
  Bacon 1⁄4 Pound, diced (100 Gram, 4 Ounce)
  Onions 2 Large, peeled and chopped
  Garlic 2 Clove (10 gm), peeled and chopped
  Carrots 6 , diced
  Oxtails 2 , cut into short lengths
  Bay leaves 3
  Thyme sprig 2
  Freshly chopped parsley 1⁄4 Cup (4 tbs)
  Salt To Taste
  Black pepper To Taste
  White grapes 2 Pound, seeded and de-stalked (1 Kilogram)
Directions

Melt butter in a large casserole.
Add bacon, and fry gently.
Add onions, garlic, and carrots.
Cook over a low heat for 15 min.
Add oxtail and herbs.
Season, cover, and cook over a low heat for 20 min.
Lightly crush grapes in a bowl, and add to casserole.
Transfer to a very low oven, 140°C/Gas Mark 1/275°F, for 3-4 hr. (until meat almost falls off the bones).
Skim fat from surface of sauce, and serve immediately from casserole.
