Pineapple Granola Crunch
|Butter/Margarine||1⁄4 Cup (4 tbs)|
|Pineapple preserves||3 Tablespoon|
|Regular rolled oats||1 Cup (16 tbs)|
|Coarsely chopped almonds||1⁄2 Cup (8 tbs)|
|Coconut||1⁄4 Cup (4 tbs)|
In a medium saucepan combine butter or margarine, sugar, and pineapple preserves. Cook over low heat, stirring constantly, till butter is melted and sugar is dissolved. Remove from heat. Stir in oats, almonds, and coconut.
Spread mixture in an ungreased 13x9x2-inch baking pan. Bake in a 325° oven about 30 minutes or till lightly brown, stirring every 10 minutes. Turn mixture onto a large piece of foil. Cool completely. Store in an airtight container in a cool, dry place.
