Couscous With Fresh Fruit
|Couscous grain||7 Ounce (Medium Sized)|
|Superfine sugar||1⁄4 Cup (4 tbs) (Caster Sugar)|
|Milk||1 Cup (16 tbs)|
|Orange||1 , squeezed|
|Fresh lemon juice||2 Tablespoon|
|Pear||1 , diced|
Put the couscous in a casserole.
Sprinkle over the sugar and pour in the milk.
Cover and microwave on HIGHfor2 minutes.
Lift the couscous grains with a fork to aerate them.
Cover and microwave on HIGH for a further 3 minutes.
Separate the grains again with a fork.
Cover and leave to stand.
Pour 1/3 cup (4'/2 tablespoons) of orange juice over the couscous.
Leave to cool completely.
Rinse the apricots and nectarines under plenty of cold running water.
Pat dry on kitchen paper.
Cut in half and remove the pits (stones), then slice.
Pour over half of the lemon juice.
Pour the remaining lemon juice over the pear cubes.
Peel and slice the kiwi fruits
