Indian Quinoa With Figs And Cardamom

Ingredients
  Olive oil 2 Tablespoon
  Onions 2 , chopped
  Garlic 4 Clove (20 gm), finely minced
  Red pepper 1 , cut into strips
  Cauliflower head 1⁄2 , cut into florets
  Carrots 4 , diced
  Quinoa 1 1⁄2 Cup (24 tbs)
  Cardamom pods 4
  Cumin 1⁄4 Teaspoon
  Salt 1 Teaspoon
  Black pepper 1⁄2 Teaspoon
  Water 3 Cup (48 tbs)
  Dried figs 1 Cup (16 tbs) (whole)
  Cashew 1 Tablespoon (for garnish)
  Peanuts 1 Tablespoon (for garnish)
Directions

MAKING
1. In a large skillet add olive oil and warm it.
2. Add garlic, onions and pepper. Saute for 5 minutes till the onions get tender.
3. Combine quinoa, cumin, salt, pepper, carrots, cardamom pods and cauliflower. Stir 5 minutes.
4. Add water and let it simmer, keeping the skillet covered for 10 minutes.
5. Turn the heat off.
6. Add figs. Cover the skillet.
7. Let the quinoa stand for at least 10 minutes. Check if well cooked.

SERVING
8. Serve Indian Quinoa With Figs And Cardamom garnished with peanuts and cashew pieces.
