The Frugal Chef'S Quinoa Salad With Tomatoes

Ingredients
  Cooked quinoa 3 Cup (48 tbs)
  Cherry tomatoes/2 medium ripe, red tomatoes chopped 1 Cup (16 tbs)
  Red onion 1⁄2 Small, sliced
  Finely chopped parsley 1⁄4 Cup (4 tbs)
  Fresh thyme leaves 1 Tablespoon
  Capers 2 Tablespoon, drained
  Extra virgin olive oil 4 Tablespoon
  Fresh lemon juice 2 Tablespoon
  Salt 1⁄2 Teaspoon
  Black pepper 1 Teaspoon
Directions

Mix the quinoa with the tomatoes, onion, parsley, thyme and capers.
In a separate bowl, mix the olive oil and lemon juice. Add salt and pepper to taste. Add to salad and toss to coat well. Refrigerate for about 1 hour before serving. Enjoy!

Here is a great salad for you to make with cooked quinoa. It is absolutely delicious but also super healthy. After seeing the video, I realized that it is not rocket science.
